I love Mexican food.
Like majorly love it.
I’d be okay with Mexican everyday.
And I love ALL the toppings. Salsa, sour cream, guacamole…just pile it on.
But I was in a dilemma.
Germany’s salsa was sweet. Like what?! Gross!
At that point I knew I had to start making it myself.
I even introduced my Swiss husband to salsa and he’s hooked. It’s pretty much a weekly staple around here.
This salsa has minimal ingredients and can be whizzed together in no time = instant salsa!
Now onto the shortcut…
Sometimes my local grocery store doesn’t always have the fresh ingredients I need. So I like to keep a few, longer fridge and freezer staples on hand so I can whip up some salsa at the last minute. Just use these substitutions in place of the fresh ingredients.
Frozen, Chopped Coriander…if yours are little, frozen cubes, let them sit out for a little bit so they’ll be able to blend better. One or two tablespoons should do the trick. Just follow the package directions.
Pickled (jarred) Jalapeños…add as many as you like depending on how much heat you want. I usually go for three or four slices since the seeds haven’t been removed.
100% Pure Lime Juice…a tablespoon is approximately the same as 1/2 fresh lime.

- 1 14-ounce can diced tomatoes
- 1 garlic clove
- 1 small red onion, roughly chopped
- 1 jalapeño, seeds removed
- juice of half a lime, about 1 tablespoon
- 1/2 tsp salt
- 1/2 tsp cumin
- handful fresh coriander
Instructions
- Place all ingredients in a blender and blend until desired consistency.
- Enjoy right away or store in the fridge for up to a week.
